If you happen to visit chinese restaurant that serves dry fried french beans (string beans) - 干扁四季豆, great flavours from sweetness of the deep fried french beans, the spicy dried chillis, the salty dried shrimp, the fragrant of garlic & onion; and not forgetting the essence - ShaoXing wine (chinese cooking wine).
Despite the work required to prepare this dish, I still find myself cooking it often, and it's well worth it. I follow the recipe from RasaMalaysia, and I just love her recipes. Here's the recipe:-
Ingredients:-
250g French beans (head & tail cut off)
60g minced pork (lightly marinate with soy sauce & white pepper)
½ inch ginger, minced
2 cloves garlic, minced
1 tbsp dried shrimp (rinsed in warm water and slightly chopped them)
3 - 5 dried chillies (seeds removed)
½ tbsp Shaoxing wine (irreplaceable, the final dish doesn't taste the same without ShaoXing wine)
1/4 tsp salt (or to taste)
1/4 tsp sugar
1/4 tsp chicken bouillon powder
Oil (1tbsp for stir fry) and more for deep fried
Instructions:-
1. Heat deep fryer (or wok) with oil and deep fry the french beans until their skin becomes wrinkly. Transfer out and absorb excessive oil with paper towel.
2. Heat up 1tbsp oil in wok. When hot, add chopped ginger and garlic, lightly stir fry. Add in chopped shrimp, ground pork and dried chillies. Stir fry until aromatic, and then add in the fried string beans.
3. Add the rest of the seasoning (note: when adding wine to the wok, try pouring it around the edge of wok so it's more evenly distributed) and continue to stir the dish a few times until fully incorporated. Dish out & serve immediately.
