Potato is one of the very few 'vegetable' that comes at a really really cheap price in Denmark. I once amazed my friend when she found out I can actually ONLY buy 5 potatoes from a supermarket. The normal purchasing unit is usually in the kilogram range ;)
Anyway, I was thinking of making chicken karaage one day but don't really feel like having it with ordinary rice, hence a japanese potato salad is quickly whipped up.
The ingredient (for 2 servings):-
3 medium size boiled potatoes
a few radish (or carrot if you prefer)
1 hard boiled egg, cut into small pieces
½ cup of japanese mayonnaise (replaceable by ordinary mayonnaise)
kosher salt to taste (can be omitted)
½ small yellow onion
1 small cucumber
1. Sliced cucumber ad onion into thin slices, sprinkle with a generous pinch of salt to release water from cucumber & onion, for about 10 minutes.
2. Drain the cucumber & onion from the 'salty' solution, set aside.
3. Combine all ingredients (including 'salted' cucumber & onion) with mayonnaise in mixing bowl. Season with salt to taste. Ready to serve.
If you use carrot instead of radish, then boil the carrot first and cut them into coin sizes. I personally prefer radish for its slightly bitter flavour and the crispy texture. Bon appetite!
