Spicy Fried Noodle

I just love love love noodle. Every once in a while, I'd feel like I haven't been eating noodle for a looong time which in fact was only less than a week from my last noodle fix. Back home, there's no lack of selection of noodle but in Copenhagen, my choice of noodle is usually fried. Why? because it's fast, it's easy and you can add almost anything that's sitting in the kitchen pantry or leftover food into the noodle and it will still taste good. And if nothing else, a bit of chilli 'zing' or sambal chilli never fails to elevate a plate of fried noodle.

Now while there's no strict guide on ingredients to use in fried noodle, the sauce is quaint essential. Very often I found some good fried noodle recipes but never bookmark it, so when I need to cook again, I failed to reproduce the same yummy factor. So now, once and for all, I am archiving this fool proof recipe for spicy fried noodle, for anyone of you out there and definitely, for myself.


Ingredient (for sauce):-
1 tbsp soy sauce
1 tbsp kicap manis (or malaysian dark soy sauce)
1 tbsp siracha chilli sauce (reduce the amount if you can't take spicy food)
2 tbsp oyster sauce
1 tsp chicken bouillon
2 tbsp water

Mix all sauce ingredient together and set aside. The sauce is enough for 2 person serving's noodle. Usually I use the instant noodle, that'd mean 2 packets of instant noodle. The sauce can be used on flat noodle and yellow noodle too. I haven't practice this sauce on rice vermicelli but I can't see why it shouldn't work. Now, whatever noodle you choose to use, don't forget to prepare them per instruction on the packaging. I normally slightly under cook the noodle because they will be fried again and then the total cooking time will be perfect.

As for what to put into fried noodle, normally I use:-
5-6 shrimps, de-shelled and de-veined
1 stalk spring onion, cut into inch length
1 bunch of bean sprout (if available)
sliced cabbage (if available / have left over)
2 eggs
pork / chicken / sausage / ham or a combination, variety & amount to your liking
2 cloves of garlic, minced

Method:
1. Heat oil in a wok or skillet over high heat. Add minced garlic and stir fried until aromatic, then add meat and shrimp. Stir continuously until they are half cooked.
2. Add cabbage / beans sprout into the wok, stir for about ½ minute.
3. Push the ingredients in wok to one side, add a bit more oil and crack the eggs into wok. Season the eggs with a bit of salt & pepper and scrambled them for about 30 seconds.
3. Add noodles into work and fry for about 10 seconds before adding in the sauce mix prepared up front.
4. Using spatula / chopstick / fork (whatever you're good at), toss the noodles and ingredients until they are well combined with sauce, about 1 minute or until noodles are cooked through.
5. Add in spring onions and stir fried for another 30 seconds. Dish out and serve immediately.
