Chinese style tomato omelette is nothing close to the omelette that we normally get at breakfast. This amazingly simple yet delicious egg dish is not a fancy restaurant dish but it's so well known among Chinese families. A search on Internet yields many different version but this is my pick. A simple cornstarch solution is added to the tomatoes to thicken the chicken stocks used and smoothed the egg texture.
Ingredient (a main dish for 2 people):-
3 big plum tomatoes / 2 ordinary size tomatoes
3 large eggs
½ tsp ginger powder / 1.5tsp freshly chopped gingers
spring onion, chopped (for garnish, optional)
1tsp cornstarch diluted in 1.5tsp cold water
salt & pepper to taste
1tbsp chicken stock
1tbsp vegetable oil
1. Cut the tomatoes in slices (not cube). You can choose to pre-boiled the tomato and peeled off the skin before cutting but it's not necessary.
2. Whisk egg and add the salt & pepper seasoning.
3. Heat pan with vegetable oil, when hot, toss in chopped ginger. Stir fried until fragrant, add tomatoes.

4. Stir fried tomatoes for a minute, add in chicken stock. Season the tomatoes to taste.
5. Add in cornstarch solution to thicken the juices.
6. Add whisked eggs and swirl around the pan. Cook until egg is done.
7. Dish out & serve with some chopped spring onions.
