One of the best fish available in Denmark is no doubt salmon, and there's no lack of ways to prepare salmon. Here's one that is for keeping - balsamic glazed salmon. I like to serve salmon with spinach, somehow I think it is the best combination, but that's just me :)
Ingredients (for 2 people)
225 g salmon fillets
2 cloves garlic, minced
1tsp white wine
1tsp honey
2tbsp balsamic vinegar
1.5tsp Dijon mustard
salt and pepper to taste

Method:-
1. Preheat oven to 360 degrees F (180 degrees C). Line a baking sheet with aluminum foil, and spray with non-stick cooking spray.
2. Coat a small saucepan cooking oil. Over medium heat, cook and stir 1 clove minced garlic until fragrant, about 2 minutes. Mix in white wine, honey, balsamic vinegar, mustard, and salt and pepper. Simmer, uncovered, for about 3 minutes, or until slightly thickened.
3. Arrange salmon fillets on foil-lined baking sheet. Brush fillets with balsamic glaze, and sprinkle with oregano.
4. Bake in preheated oven 15 - 16 minutes. During the last minute, brush fillets with remaining glaze, and season with salt and pepper.
5. While fish is baking, prepare the spinach & fettuccine.
6. When fish is done, dish out on serving plate on top of spinach & pasta.
