Another quick less than 30mins recipe to be kept for weekday meal - stir fried pork with bell pepper & onion. Bell pepper is not my favourite fruit but when used, their distinct flavour usually enhanced the dishes, plus the eye catching colorful palate they create makes them one of the frequent ingredient in my cooking.
Ingredient:-
If time permits and you'd like to make a 'deluxe' version, then roast the bell peppers as halves in oven at 500degF (240degC) and serve the stir fry pork on top of the roasted bell pepper. The sweetness of the roasted bell pepper compliments the pork well too. However, if you're doing that, I'd recommend to still slice up some bell pepper and stir fry with the pork. Bon appetite.

250g lean pork, cut into thin slices
½ green bell pepper & ½ red bell pepper, cut into cubes or slices
1½ tablespoons vegetable oil
salt & freshly ground black pepper to taste
1 tablespoons soy sauce
½ tablespoon Asian-style sesame oil
½ tablespoon cornstarch
½ tablespoon light brown sugar
1 clove garlic, minced (about 1tsp)
1/4 teaspoon red pepper flakes
Splash of white wine vinegar (I use mirin instead)
1 medium-sized yellow onion, chopped
Methods:-

1. Put the soy sauce, sesame oil, cornstarch, sugar, garlic, pepper flakes, and vinegar in a medium-sized mixing bowl and stir until the cornstarch has dissolved completely. Add the pork slices and toss until the pork is thoroughly coated. Set aside for about 10minutes.
2. Heat pan with oil and when oil is hot enough, add garlic, bell pepper & onion. Stir fry for about a minute or two, watch out not to burn the garlic. Season with salt & pepper.
3. Add marinated pork and continue stir-fry until pork is cooked through and the vegetables are slightly softened (about 3 - 5 minutes). Dish out & serve immediately with rice.
