I've been watching the Singpaorean drama series The Little Nyonya and suddenly crave for Nyonya food thanks to the excessive cooking scenes early of the series. So I set out for a search for the easiest possible Babi Pong Teh recipe and found below from OhBin's blog. I made a slight modification due to availability of material.
Ingredient:-
10 small shallots, minced
5 cloves of garlic, minced
1 heap tablespoon of spicy bean paste 辣豆瓣酱
2 Shiitake mushroom, sliced
250g pork belly (cut into small pieces)
3 potatoes (cut into small pieces)
1 tablespoon cooking oil
I omitted the potatoes because I don't have them in my pantry.
Seasoning:-
½ tbsp caramel dark soy sauce
1 tbsp soy sauce (or to taste)
*some bean paste are saltier than others, so adjust accordingly
1 tsp sugar
Method:-
1. Heat oil in pan, when hot, add minced shallot and garlic. Saute for about a minute.
2. Add spicy bean paste, quick stir for a few seconds.
3. Add the pork belly pieces, stir to coat the sauce. Add about 4 tablespoon of water, cover the lid to the pan & braise for about 20 minutes. Add mushroom slices in between.
4. When almost ready, add the seasonings. Adjust taste accordingly to your liking.
5. Dish out & serve with hot steamed rice.
If you don't have spicy bean paste on hand, the ordinary bean paste is also find. Add some dried / fresh chili to the dish for a little 'kick' :)
