I have some puff pastry left from making the mini beef wellington and been thinking what's new that I haven't made before that could use up the puff pastry. Mini-pinwheel came into the picture. Armed with a jar of raspberry jam and some almond slices in my pantry, a simple raspberry almond pinwheel is created. Why mini? because I only have a small amount of puff pastry and but of course, it's so cute!
It is so simple that one picture is already self-explanatory. Bake at 200degC for 5 - 10 minutes or until golden brown. My raspberry jam is slightly on the sour side and with the additional texture & flavour of the almond, absolutely love the outcome.
