Rich and savory sage brown butter sauce is a quick way to dress up any pasta in a luxurious way. Full fat butter, fresh sage and the optional garlic or lemon juice is so easy to put together, yet elegantly compliments almost any type of pasta (or even poultry and vegetable) and can be ready in less than 15 minutes, what more to ask for? :)
Ingredients:-
4 tbsp butter
8 fresh sage leave
1 clove garlic, crushed (optional)
salt & pepper, to taste
4 tbsp grated Parmesan or Parmigiano-Reggiano
any pasta of your choice (I used Gran Panzerotti with Prosciutto & goats cheese)
Methods:-
1. While the pasta is cooking, melt the butter in medium sauce pan set over low-medium heat. When the butter begins to get just slightly bubbly, add the chopped garlic clove & stir for about a minute.
3. Season the sage brown butter sauce with ground black pepper (and salt if needed).

2. Add the sage leaves and continue stirring and cooking the mixture for 1 to 2 additional minutes, until the butter has turned golden brown (or nutty color 'noisette') and has a rich, nutty aroma.
3. Season the sage brown butter sauce with ground black pepper (and salt if needed).
