Panko Pork Chop with Ginger Soy Wasabi Sauce


Ingredients:-

5 tbsp panko (Japanese breadcrumbs)
1 egg white, lightly beaten
2 pieces of 110 - 120g boneless pork chops (about 1/2 inch thick)
1 tbsp cooking oil
1/8 tsp salt
½ tbsp fresh chopped ginger
1 spring onion, thinly sliced

Sauce:-
3 tbsp chicken broth
1 tbsp sake or dry sherry
1tbsp soy sauce
1 tsp sugar
½ tsp wasabi paste




Preparation:-
1. Combine the sauce ingredients in a small bowl. Place panko in a plastic/brown bag. Place egg white in a shallow dish, lightly beaten.
2. Dip pork in egg white and put in the panko bag. Shake vigorously to coat the pork chop with panko.
3. Heat cooking oil in a large nonstick skillet over medium-high heat
4. Add pork. Cook for 4 minutes on each side or until done.
5. Remove pork from pan; sprinkle with salt.
6. Reduce heat to medium. Add ginger to pan; cook 30 seconds, stirring constantly. Add broth mixture to pan, scraping pan to loosen browned bits. Bring to a boil and then stir in green onions. Spoon sauce over pork.

Serve with steamed white rice and your favourite vegetable.
