When Japanese meets pasta, spaghetti napolitan is created as a fusion product. This very popular dish (in Japan) consists of spaghetti, tomato ketchup or a tomato-based sauce, onion, button mushrooms, green peppers and sausages / ham / bacon. I was a bit skeptical about just ketchup as base sauce, but the result is self-explanatory on why this dish is so popular in Japan. Sweetness of the onion, freshness & crunchiness from the bell pepper and the proteins, this is a dish that is not fancy but shines.
I follow the recipe from the popular Japanese 'You Tuber' - Cooking with Dog and prepared the dish in less than 30 minutes. Most of the ingredients are household staples, I don't even need to shop anything extra. The spaghetti in this dish is cooked until it gets soft instead of the usual al dente Italian way but you may of course have it any style you prefer. Beauty of home cook ;)
Ingredients:-
(serves 2)
150g spaghetti
1litre water
2 tsp salt
½ onion (120g), cut into wedges
1 garlic clove, minced
4 slices of ham (100g), cut into 1/3" strips
5 button mushrooms, cut into 1/4" slices
1 whole green bell peppers, cut into thin strips
2 tbsp oil
3 tbsp tomato ketchup
2 tbsp grated Parmesan cheese
½ tbsp butter cubes
chopped parsley (to taste)

Methods:-
1. Bring a pot with 1 litre of water with 2 tsp salt to boil. Scoop out 3 tbsp of boiling water and set aside. Add the pasta and cook per instruction until soft.
2. Heat a pan with 2 tbsp oil. When hot, add onion and stir fried for a minute.
3. Add garlic and continue to stir fry until aromatic.
4. Add button mushroom & ham, stir fried until lightly colored and then add the bell pepper.
5. When the bell pepper is cooked to the level you like, add the tomato ketchup and stir to mix.
6. Add the reserved 3 tbsp water from step1. Mix the sauce evenly and turn off heat.
7. When pasta is cooked (should be about the same time when step6 finish), drain the pasta and add it to the pan.
8. Add parmesan cheese and butter cubes. Toss well to coat.
Serve immediately with chopped parsley and more grated parmesan if desired.
