Kaiserschmarrn

First heard about Kaiserschmarrn from a colleague. Yes, I've been to Vienna but still remains completely ignorant about this wonderful shredded pancake. Well, it's never too late to start. Tried a few different recipes online & this is by far the best combination.



Ingredients (serves 4 as dessert or 2 as breakfast):
100g flour
3 eggs, separated
125ml milk
1 tbsp caster sugar
1/2 tsp vanilla extract
pinch of salt
2tbsp raisins (soaked in rum for 30mins, optional)
30g butter
icing sugar

Method:
1. In a medium bowl, mix together egg york, sugar, milk, flour, vanilla extract and salt until well combine.

2. Beat the egg white until stiff peak forms and using a spatula, fold the egg white in the flour mixture gently until just combine.

3. Heat a large non-stick pan over medium heat and melt the butter. Pour in the mixture and turn down the heat to low. Sprinkle the raisins, cook for about 10 minutes, checking the bottom if it turns brown.

4. Turn the pancake, never mind if it breaks. Cook for 2 minutes and then started to rip the pancake into bite size using 2 forks. Keep roasting it in the pan until brown but not over cook.



5. Dish out, sprinkle generously with icing sugar and serve with any fruit sauce/jam preferred.
