Ingredients:-
(serve 2 as part of multi-course meal)
150-200 grams bitter gourd (bitter melon/苦瓜)
2 eggs lightly beaten
1 tbsp cooking oil
1 clove garlic minced
a small pinch of salt to taste
Methods:-
1. Cut bitter gourd length wise to half and use a spoon to scoop out the seeds. Rub a small amount of salt on the halved bitter gourd and leave for a few minutes, then rinse away the salt with water.
2. Slice bitter gourd thinly.
3. Heat oil in wok over medium high and stir fry garlic until fragrant, about 30 seconds.
4. Add bitter gourd slices and stir fry for about 2-3 minutes until almost cooked (turning slightly translucent). Add a little water if the bitter gourd starts to get burnt. Season to taste with salt.
5. Pour the beaten egg slowly over the bitter gourd slices. Stir fry until the egg is cooked. Taste and add seasoning if needed.
Recipe Variations
Adding meat – in a small bowl, mix 100g of minced meat (pork, chicken or beef of your choice), a small pinch of sugar, few dashes of white pepper, ½ tsp sesame oil and 1 tsp light soy sauce. Marinade the minced meat for 10 minutes and add the meat after step 3. Stir fry until the meat is halfway cooked before adding the bitter gourd slices.
