The recipe is taken from http://www.yourhomebasedmom.com/easy-french-bread/. We love home baked bread but sometimes don't have patience to wait for the long rising time. Below recipe can be done in mere hour with help of stand mixer or a food processor with dough hook.
Ingredients:-
(Makes 1 loaf)
30ml warm water (between ~40degC)
½ pkg dry yeast (1.125 tsp or 5.5g)
½ tsp sugar
225g - 250g flour
½ tbsp sugar
½ tsp salt
125ml warm water
1 egg white + 1 tbsp water
Methods:-
1. Combine first 3 items together, allow to stand for 5 mins until foamy.
2. Add ½ tbsp sugar, salt & warm water to the yeast mixture.
3. In the mixer / food processor, add in flour (I retain about 2 tbsp at the start) and liquid mixture, and knead for 5 minutes. Add more flour if dough is too wet.
4. Allow to rise in room temperature until double (about 20 mins)
5. Heat oven to 150 degC and boil a pan of water at the same time.
6. Roll out the dough with rolling pin, then roll it up jelly roll style, turns ends underneath and put the seam side underneath.
7. Placed on a greased baking sheet or baking paper, cut 3 diagonal slits (about 1/4" deep).
8. Brush top of bread with egg wash and put it on the top rack of the oven. TURN OFF THE OVEN! and place the pan with boiled water on the lowest rack.
9. Let the bread rise again for about 20 mins.
10. Heat the oven to 220 degC with the bread inside, for 10 minutes (start the timer as soon as you turn on the oven). After 10 minutes, turn the heat down to 190 degC and bake for ~6 minutes. Done.
