Pan Waffles With Bacon & Egg

Super easy waffle recipe from Jamie Oliver that doesn't require a waffle iron. He made it with griddle but since I don't have any, I made it with pan, turns out great as well.



Ingredients:-
(for a 9" round waffle)
1 egg
150 ml milk
112.5 g self-raising flour*
1 tsp baking powder
50 g salted butter, melted and cooled
* I use all purpose flour + 1 tsp baking powder + 1/4 tsp salt as substitute


Methods:-
1. Crack the egg in a big bowl, add the milk and whisk to combine. 

2. Sift in the flour, baking powder and salt then whisk until fully combined. 

3. Add the cooled melted butter and gradually stir it through the mixture. It's important not to stir the mixture any more after this or your waffles may be tough.

4. Place griddle/pan over medium high heat, spray with oil and add an extra teaspoon of butter. As soon as the butter is melted, pour in the waffle batter and swirl it around to fill the pan. You could also make smaller waffles, if you prefer.

5. Lower the heat to medium-low and cook the waffles for around 6 minutes, or until lightly golden on the bottom. Flip over and continue to cook for around 6 minutes, until golden and cooked through.

6. Give the waffle an extra couple of minutes on each side to crisp up, then serve them with your toppings. 

I serve half of the portion with bacon & egg; and the other half with spreadable honey and a big glass of strawberry milkshake. A complete wholesome breakfast/brunch, yum.
