No Bake Oreo Cheesecake

Ingredients:-
Base
150 g Oreos (14 Oreos), finely crushed
45 g butter, melted

Filling 
250 ml double cream
100 g icing sugar
400 g cream cheese (full fat), room temperature
1 tsp vanilla extract
10 - 12 Oreos, roughly chopped

Topping
4 Oreos, finely crushed

Methods:-
1. Line a 7 inch (or 8 inch) spring form base with baking paper. 
2. Mix the base ingredients together and press firmly onto spring form base to form an even layer. Set in the fridge to chill while making the filling 
3. Beat the whipped cream until soft peak formed, then add in icing sugar and beat until stiff peak formed.
4. Add the room temperature cream cheese & vanilla extract into the mixture, mix until incorporated.
5. Fold the chopped Oreo into the mixture. 
6. Take the base out from the fridge and pour in the mixture. 
7. Sprinkle the top with finely crushed Oreos and set in the fridge to set for at least 4 hours or overnight.
